Introduction

I normally feed a family of four from this roast chicken and then take the rest and make chicken noodle soup with it. I normally feed a family of four from this roast chicken and then take the rest and make chicken noodle soup with it.
Number of Servings: 16

Ingredients

    1 5-6 LBS chicken
    1 onion, quatered
    1/2 cup of water
    2 Tbsp cornstarch

Directions

Rinse the chicken and pat dry. Place in a glass baking dish along with onion quarters. Cover with tin foil and bake at 350 for 1 1/2 hours. Remove the foil for the last 20 minutes of cooking and baste chicken with it's own juices. Remove the chicken to a plate and pour the juice and onion into a small sauce pan. Bring to a boil. In a cup mix water and cornstarch. When the juice is boiling add the cornstarch mixture and stir continueously until the gravy has reached a hard boil again.
