Ingredients
-
1/2 cup Egg Beaters
1/2 of an Aidell's Pineapple Bacon Sausage
2 TBL crushed pineapple
1 oz of your favorite low fat cheese
Pam Cooking Spray
Directions
Makes 1 serving
Cut sausage in small pieces and microwave for 30-60 seconds
Spray pan with Pam or other fat-free cooking spray
Pour egg beaters into heated pan, add sausage
pineapple and cheese
cook until edges are browned, fold in half, continue to cook for 1-2 minutes until egg appears cooked completely through.
I will admit I'm not great with omelets, many times they turn into a scramble, but it tastes good that way too.
