Introduction
This recipe was included with my Crunchless Abs DVD's--it has no added salt, is vegetarian and is delicious. A tip: eat some of this before you eat a meal and you will eat less at your meal while getting all the nutrients you need. Ingredients

1 tsp. olive oil
1 tbs. Mrs. Dash salt free Italian Medley seasoning
1 tsp. garlic powder
1 tsp. black pepper
2 8-oz cans low sodium veggie broth (I tweek this a bit and use a box of broth to add more liquid)
1 oinion, diced
1 medium green or red pepper, diced
8-oz package mushroom, quartered
1 medium zucchini, diced
1 medium yellow squash, diced
32-oz can low-sodium diced tomatoes
2 carrots, diced
1 medium cabbage (or can substitute broccoli or Brussels Sprouts)
1 cup frozen green beans
1/2 cup chopped fresh parsley
Directions
In your large saucepan, heat olive oil and saute onions and peppers until golden. Add mushrooms and saute until golden and dry. Add the rest of the ingredients and seasonings and simmer for 1+ hour.
You can substitute the veggies listed for other seasonal veggies like pumpkin squash, turnips, etc. (but no potatoes). You can also use fresh sage and thyme instead of the Italian seasoning.
