Ingredients

    * 1 cup whole wheat flour
    * 1/2 cup all purpose flour
    * 1 tsp. baking soda
    * 2 tsp. baking powder
    * 1/2 tsp. salt
    * 2 tsp. pumpkin pie spice
    * 2 1/2 tbsp. flax seed meal
    * 1 egg
    * 1/2 cup brown sugar
    * 1/3 cup unsweetened applesauce
    * 1 tsp. vanilla
    * 3/4 cup low fat milk
    * 1/2 cup pumpkin puree
    * 1 ripe banana, mashed
    * 2 tbsp chopped golden raisins and dried cranberries.

Directions

1. Preheat oven to 400 and grease a 12-cup muffin tin. Sift together flours, baking powder and soda, salt, pumpkin pie spice, flax seed.
2. In a seprarate bowl, beat egg with brown sugar until well combined. Stir in vanilla, milk, applesauce, pumpkin puree, banana.
3. Pour wet mixture into dry mixture and add chopped raisins/cranberries and stir until just combined.
4. Pour mixture into muffin cups and bake approximately 17 minutes or until a toothpick inserted comes out clean.

    Yum! Great recipe. Very moist and delicious. I will definitely make these again. Skipped flax and cranberries (didn't have any) and skipped raisins - personal pref. Used soy milk and added a little OJ. Topped with chopped walnuts and a sprinkle of brown sugar. Yummy! - 10/24/09

    These were tasty and stayed together exceptionally well - no crumbs! Pop out of pan! My kids don't like raisins & cranberries however, I finely chopped them & added chopped walnuts too. They ate them no problem. Dense, moist texture, low calories & no oils. Mini muffins bake in 13 min. Thx! - 2/21/09
