Number of Servings: 8

Ingredients

    8oz (1/2lb) Frozen cooked shrimp, w/o shells
    8oz (1/2lb) Frozen Bay scallops
    10 cloves garlic, chopped (YES 10)
    1/4 cup essence (Emeril stuff)
    1/4 cup olive oil
    1 Tbls Chipotle Tabasco Sauce
    1 tsp pepper
    1/2 tsp salt

    1/2 Red Pepper coursely chopped
    1/2 Orange Pepper coursely chopped
    1 Green Pepper coursely chopped
    2 Roasted Red Peppers (bottled)

    2 Tbls canola oil
    8 oz Mafalda(precooked weight), (or any other small noodle)

Directions

Mix 1st 8 ingredients together and let marinade for a couple of hours. 1 should fine if your time pressed.

Cook noodles to aldante.

Saute all the peppers in canola oil. When heated through and still firm, add seafood and cook on high for 5-8 minutes.

Toss in pasta with a 1/2 cup of the pasta water.
Sprinkle with 1 Tbls Parmesan Cheese

Serving is 1 Cup
