Introduction

A great full flavored quick meal for any night of the week. For the nutirtion facts I figured in salsa, but I don;t like chunks of tomato so I used tomato sauce and chopped onion and it worked well still. Ingredients

    1.5 lbs chiken breast or tenders (boiled and Shreaded)
    2 Cans low sodium Corn
    1 Can black beans (rinsed)
    1 Jar Salsa (or tomato sauce)
    Cilatro
    Onion (optional)


Directions

Combine all incredients in a large pot, make sure the Chicken is submerged in the liquid from the salsa or Tomato sauce. Let stew over medium low for 45 mins. The longer is stews the more flavorful. Goes great with cilantro Lime rice on the side.
