Introduction

I call this "lazy" because it skips the steps of dipping and coating. Still healthy and delicious!

Number of Servings: 4

Ingredients

    1 lb. chicken
    1/4 cup of greek yogurt (I used 0% fat)
    1 lemon
    1/2 tsp rosemary
    pepper to taste
    No salt spice mix

Directions

1. Seperate or slice your chicken in to 4 portions. Arrange then on a baking dish sprayed with non stick spray or olive oil. *Our chicken breasts are pretty big so I cut them in half.

2. In a small bowl mix yogurt, lemon, rosemary & pepper.

3. Spoon yogurt mixture over each chicken breast until covered. I didn't use all of the yogurt mixture, but it is up to you. Sprinkle your no salt spice mixture on each breast over the yogurt mixture.

4. Tear the pieces of bread in to smaller pieces and put in a food processor to make bread crumbs. Then sprinkle bread crumbs over each breast to evenly coat. I had more than enough.

5. Bake in preheated oven at 400 degrees for about 20 mins. The top of the bread crumbs should get a nice golden brown look. Serve with your favorite side and enjoy!
