Introduction

Honestly......I learned to make chicken-n-dumplings from scratch from my grandfather. I don't think anything can really beat them with all the butter, cream, and home-made egg dumplings. BUT....this version is a good attempt and it's also much faster and more healthy. Therefore it makes them a weeknight friendly meal. The kids also love it. Ingredients

    12 oz. chicken breast

    1- 32oz. box of chicken broth

    4 cups of water

    1 tsp seasoned salt

    1 tsp ground black pepper

    1 can (of 8) Pillsbury Grands Reduced Fat Buttermilk Homestyle Biscuits

    2 cups of frozen peas and carrots






Directions

Makes 10 HEARTY servings. Each serving consists of 1 cup of dumplings, chicken & veggies along with 1 extra cup of broth.

In a large stock pot combine chicken broth, water, chicken breasts, seasoned salt and black pepper. Poached the chicken breasts for approximately 10 -15 minutes or until cooked through.



As chicken is cooking take each biscuit and flatten it with slightly with your hand. Cut each biscuit into 8 tiny triangles. Set aside.



When chicken breasts are done remove them from broth and set aside.


Add frozen peas and carrots to broth and bring back up to a boil.


When broth is boiling slowly add each biscuit triangle to the broth. They will float until they start to cook. Simmer dumpling uncovered for approximately 25 - 30 minutes. As dumplings are cooking shred the poached chicken and return to the pot. You will want to be sure and stir the pot occasionally because as the dumplings cook they will start to settle at the bottom and you won't want them to stick.
