Ingredients

    2 eggs or egg beaters
    .5 cup or a handful fresh spinach torn into smaller pieces (torn in half is good)
    1 tsp garlic powder or to taste
    2 tbsp of reduced fat mozzarella or cheese of your choice ( I just sprinkled this on so I don't know the exact measurement)
    1 tbsp EVOO

Directions

1. Break eggs in bowl and mix with garlic powder
2. Heat oil in skillet over medium heat 1-2 minutes
3. Add torn up spinach to skillet following shortly by eggs.
4. Scramble up eggs and add cheese right before they are done.

Enjoy!

*These would probably go well with other veggies I just prefer simple and quick.

    Very Good
    I make this in the microwave. Scramble the eggs, add the spinach and mix a little more, then nuke about 2 minutes. Quick & easy! I'm thinking about adding some morningstar sausage next time. - 3/31/12
