Introduction

When my son was little we had to switch to whole food for his skin allergies. A great side benefit was learning low fat and healthy recipes that were still yummy. Ingredients

    2 1/2 C. Whole Wheat Pastry Flour
    1 1/2 tsp. baking soda
    1 1/2 tsp cream of tartar
    2 tsp cinnamon
    1/4 tsp cloves
    1/4 tsp nutmeg
    1 1/2 cups honey
    2 tsp vanilla
    1/3 c unsweetened applesauce
    2 2.5 oz containers prune baby food puree
    1/3 c frozen apple juice concentrate (thawed)
    2 egg whites , unbeaten
    2 1/2 cups peeled and chopped baking apples
    1/2 cup dark raisins (opt)
    2 egg whites, lightly beaten.

    Cinnamon Sauce
    1 Tbl whole wheat pastry flour
    3/4 cup evaporated skimmed milk
    2 Tbl honey
    2 Tbl frozen apple juice concentrate
    1/2 tsp cinnamon
    1/2 tsp vanilla

Directions

Preheat oven to 325. In large bowl, combine all dry ingredients and set aside.

In medium bowl, mix honey, vanilla, applesause, prune puree, juice concentrate and two unbeaten eggs. Fold in chopped appes and raisins. Stir into flour mixture until just blended. Gently stir in 2 lightly beaten eggs. Do not overmix or the cake gets too dense.

Spoon batter into two 9x1 1/2inch nonstick baking rounds.

Bake at 325 for 40 -45 minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes, then remove from pans.

Sauce:

In small saucepan over medium heat, whisk together all ingredients except vanilla. Bring mixturue to low boil, reduce heat and cook appx 5 minutes or until thickened. Stir in vanilla, let cool slightly and ladle over assembled cake. Serves 16.
