Introduction

These are baked falafel fritters that taste great and are really healthy! Taken from the pH Miracle Diet book, which describes alkaline eating for better internal pH. Ingredients

    1 cup beans (I used black, but you can use any kind)
    1 15 oz can garbanzo beans
    1/4 cup Parsley, freshly chopped
    1/2 cup Cilantro, freshly chopped
    1 red chili pepper, remove seeds
    1/4 cup red onion, chopped
    1 Tbsp. lime juice, fresh
    1 tsp. cumin
    1 clove garlic
    3 Tbsp. brown rice flour (or substitute other)

Directions

In food processor, process cilantro and parsley until fine. Add the next nine ingredients. Pulse until the mixture forms a very thick, smooth paste (you will need to scrape the sides down and process a few times.) Add the flour and pulse to combine. Place this mixture in the refrigerator for an hour to chill. This can be made a day ahead of time.

Drop falafel mixture 1 Tbs. at a time onto a non stick cookie sheet. Bake at 350 degrees for 10-12 minutes. You can brush lightly with olive oil and bake until golden brown as well.

Serving Suggestions:

Serve alone with hummus.

Or you can serve warm on a piece of lettuce with onions, tomatoes, tahini sauce and sesame seeds to garnish. Wrap lettuce around the fritter and enjoy!
