Ingredients

    2 medium pre-cooked sausage links, whatever you have
    4 sweet bell peppers, orange/yellow/red is best
    2 yellow chile peppers, if onhand
    5 gold/red potatoes, or whatever onhand
    1/4 c. chopped onion, I use green onions
    1 T. cilantro, more if you like and have it
    2 T. butter (optional, it is in the calculation)
    3 T. extra virgin olive oil, or your choice
    1 t. paprika
    1 t. cumin
    1 t. rosemary
    1 t. marjoram
    1 T. dried mustard
    2 T. basil

Directions

Makes a 4 serving main dish

Using a large skillet, put in 1/2 the oil and turn the heat on medium. Start a pot of water to boil for blanching the potatoes on another burner, turning that burner to high.

While the oil is heating, chop the onion and cilantro as small as you like. Saute the onion, cilantro, and half the seasonings turning the heat to medium high. Stir occasionally while you do the next:

Scrub and cut the potatoes into fairly small pieces - about 1/2 inch square - to get them ready for the water. (Stir your saute and smell the goodness)

Wash and cut the peppers into small pieces, tossing them into the saute and adding a little butter or oil (both if you like) as you add the vegetables. (toss the potatoes into the water when it is ready)

Set the timer for the potatoes for about five minutes so they will just being to soften but not get mushy.

While the potatoes are in the five minute bath, add the remaining spices to the skillet and stir to mix well, slice up the leftover sausage and add this to the mix.

Drain the potatoes and add them to the skillet, mixing everything to coat with seasonings. Add a bit more butter/oil if needed, adjust seasonings to taste. Cover and simmer about 10 minutes or until potatoes are completely done.

While the skillet is simmering, you can microwave/steam other vegetables or prepare a nice salad.
