Introduction

I first saw these as a south beach recipe, but made with turkey sausage and 100% eggs. So I switched it up a little to make it a lower in calories. I first saw these as a south beach recipe, but made with turkey sausage and 100% eggs. So I switched it up a little to make it a lower in calories.
Number of Servings: 6

Ingredients

    -3 large eggs
    -2 eggs - egg beater style
    -Onions, peppers, mushrooms (or a little southwestern blend frozen veggies)
    -3 pieces canadian bacon
    -Any spices you may like (salt, pepper, Emerils Original, etc)
    -A little reduced fat cheese for the top (I used 1/4 cup total for the nutrition info)

Directions

Cook veggies and bacon in skillet , when done set aside to cool a little
Line muffin pan with 6 paper cups
Mix eggs, egg beaters, and spices in with veggie/bacon mixture
Fill muffin cups with mixture
Sprinkle a little cheese on top
Put in oven for ~20 min at 350F until eggs are set
