Introduction

Ingredients

    2 ripe bananas
    1 cup whole wheat pastry flour
    1/2 teaspoon baking soda
    1/4 cup shortening
    1/2 cup sugar
    1 large egg
    1/4 cup reduced fat sour cream
    1 teaspoon vanilla
    1/2 teaspoon salt
    1/4 teaspoon cinnamon

Directions

Preheat oven to 350.

Cut 2 bananas into pieces and mash. Set aside.

In small mixing bowl, mix 1 cup of flour and 1/2 teaspoon baking soda.

In large mixing bowl, beat 1/4 cup of shortening and 1/2 cup of sugar until mixed.
Add 1 large egg and beat until combined.
Add flour mixture and 1/4 cup reduced fat sour cream and beat until combined.
Add bananas, 1/2 teaspoon of salt, and 1 teaspoon of vanilla and beat until combined.

Fill mini muffin cups 3/4 full.

Bake for 15 - 20 minutes until tops are golden brown.

Makes 24 mini muffins.
