Introduction

Ingredients

3 lbs. Chicken (with skin and bone)
1 medium onion
2 cups diced potatoes
1 can lima beans
1 can diced tomatoes
1 can creamed corn
1 cup barbecue sauce
Worcestershire Sauce
Salt
Pepper
Directions
Put the chicken in a large pot and fill with water until coated. Bring the water to a boil and reduce to a simmer. Boil the chicken until cooked, then remove chicken from the pot. Allow the broth to continue to simmer. Let the chicken cool a bit, then remove the meat and return the bones and skin to the pot. Cook down the broth while you chop potatoes and onions.
Once the broth has reduced, remove it from heat and strain it to remove the skin and bones. Return approximately 4 cups of broth to the pot and add chopped potatoes and onions. Let simmer for 10 minutes.
Next, return chicken to the pot. Add the canned tomatoes and the canned lima beans. Stir in one cup of barbecue sauce and worcestershire, salt, and pepper to taste. Let simmer for approximately 10 minutes.
Last, add the cream corn, stirring frequently to prevent burning.
Makes 10 servings.
