Ingredients

1 pound tilapia fillets, thawed
1 Tbsp olive oil
1 can diced tomatoes (14 ½ oz)
1 cup diced onions
1 cup white wine
Directions
· Heat large skillet over medium-high heat. Add oil.
· When hot, add onion and cook, stirring frequently, until softened but not browned.
· Add tomatoes and cook, stirring occasionally, for about 5 minutes.
· Place fish on top of tomatoes/onions. Pour wine over fish and sprinkle with parsley.
· Cover and reduce heat to simmer. Simmer until fish is cooked all the way through, about 10 minutes.
· Remove fish and wrap in foil to keep warm.
· Bring wine/tomato/onion mixture to a boil and cook about 3 minutes.
· Place fish on rice or pasta and dump wine/tomato/onion mixture on top of fish and pasta.
