Ingredients

1/2 lb soba noodles, cooked al dente and drained
1 tsp sesame oil
1 tbsp olive oil
3 garlic cloves, minced
1 tbsp grated fresh ginger
6 green onions, thinly sliced
1 cup unshelled edamame beans
1 red pepper, cut in matchsticks
1 red chile pepper, minced
1 tbsp soy sauce
1/2 tsp honey
1 tbsp lemon or lime juice
Directions
Toss cooked noodles with sesame oil and set aside.
Heat olive oil in a skillet.
Add garlic and ginger and sauté until fragrant, about 1 minute.
Add edamame and red pepper. Cook 2 minutes.
Add noodles, chile pepper, soy sauce, honey and lime juice.
Toss to combine and serve.
