Introduction
This is a recipe I put together based on what I had onhand, with some inspiration from a Chicken Salsa dish I saw on this site, but done on the stovetop. Ingredients

1 Tbsp Unsalted Butter
1 Tbsp Minced Garlic
(I use herbs and spices too, but change by my mood- it's fine without added spices.)
2 Chicken Leg Quarters, skin and bone removed, meat cut into bite sized pieces
1 Onion, roughly chopped
1 Cup Pace Lime & Garlic Salsa
1/2 to 1 Cup of Bell Peppers (I used yellow and red)
1/4 Cup of roughly chopped celery
Directions
Makes 4 1-cup servings
1) Melt butter in skillet.
2) Add garlic (and spices) to butter.
3) Once flavors have blended, add chicken.pieces, stirring/flipping as needed so they cook through.
4) Once chicken is cooked through, add onion, stirring until mixed, then cover with a lid till onions begin to soften (about 5 minutes).
5) Add salsa, peppers, and celery to skillet, stirring until mixed.
6) Lower heat and cover with a lid for about 10-15 minutes until done.
Can be served as a stew or over rice. The nutritional information is for it being served on it's own.
