Introduction
This is just a little something that I threw together this morning. It smelled heavenly simmering on the stove. This is just a little something that I threw together this morning. It smelled heavenly simmering on the stove.Number of Servings: 4
Ingredients

4 Cups of Home made Chicken Broth
8 ounce carton of sliced Mushrooms
2 cups of Spinach
6 ounces of sausage
1 Cup of Cooked Rice
1 Egg
Directions
1. In a soup pan, put the chicken broth, sliced mushrooms, and spinach. Simmer on medium heat.
2. Heat a skillet on medium heat. Meanwhile in a medium bowl, mix the sausage, 1/2 cup of rice, and egg together. Form into 16 small meatballs. Brown meatballs in skillet for 4 minutes. Turn each meatball over and brown for 4 more minutes of until done.
3. Evenly Spoon ladles of chicken broth , mushrooms, and spinach mixture into 4 bowls. Take remaining rice and divide into four bowls. Put 4 meatballs into each bowl. Voila! Impromptu soup.
Serving size: 4 bowls.
Also, Please take the time to make homemade chicken broth. It's lower in sodium and SO delicious.
