Ingredients

    3 TBS egg whites substitute (or 3 egg whites)
    1 cup whole wheat flour
    3/4 cup skim milk
    1/4 cup unsweetened applesauce
    3 tsp baking powder
    1/8 cup flaxseed (whole or ground)
    1/8 cup wheat germ

Directions

In medium mixing bowl beat together egg whites and milk. Mix in applesauce. Add flour, baking powder, flaxseed, and wheat germ. Mix well.

Heat a non-stick skillet. (You may wish to add a TBS of veg oil or spray with non-stick cooking spray). Cook pancakes on one side until the edges appear dry and bubbles form in the batter. Flip and finish cooking on the other side.

Yields 12 pancakes, 3 pancakes per serving.
