Ingredients

    10 fresh large shrimp, cleaned but with tails on
    5 slices regular or turkey bacon, halved, crosswise
    3/4 cup red, yellow &/or green sweet bell pepper (1" pieces)
    1.5 tsp finely shredded orange peel
    1 tbsp orange juice
    1 tsp snipped fresh rosemary
    1.5 cups hot cooked rice
    3/4 cup cooked or canned black or pinto beans, rinsed and drained

Directions

Rinse shrimp. Pat dry with paper towels. Wrap each shrimp in half slice of bacon. Alternately thread shrimp and peppers on skewers. Use a small bowl to combine 1/2 tsp of the orange peel, orange juice and rosemary. Brush over kebabs. Coat George Foreman Grill with cooking spray. Preheat 5 minutes. Cook 2.5-4 minutes until shrimp turn opaque & bacon is crisp. Stir together rice, beans and remaining orange peel in medium saucepan. Heat through. Serve kebabs with rice mixture. I think this should serve two people well.
