Introduction

Yum! This is a quick, cheap and simple side dish. Perfect for a summer gathering or pot-luck. Yum! This is a quick, cheap and simple side dish. Perfect for a summer gathering or pot-luck.

Ingredients

    2 cups frozen shelled edamame
    1/2 cup frozen or fresh corn kernels
    1/4 cup chopped scallions
    1 Tbl olive oil
    1 clove garlic chopped
    1 cup fresh tomatoes chopped
    1/4 cup fresh basil leaves chopped
    1/4 tsp sea salt
    1/4 tsp fresh black pepper
    3 Tbl red wine vinegar

Directions

Toss edamame, corn, oil, garlic, scallions, salt and pepper. Spread out onto a metal non stick cookie sheet. Roast in a 400 degree preheated oen for 12-15 mins. Cool completely, about 30 mns. in the refrig.

Toss with vinegar, basil and tomatoes.

Serve chilled or room temp.

4 servings, about 1 cup each.
