Ingredients
INGREDIENTS
1 cup of chopped onion 2 cloves of garlic minced
2 1/2 tsp ground cumin 1/2 tsp oregano
2 TBSP of olive oil 4 chicken breasts
2 cups chicken broth 1 cup water
1 tsp lemon pepper 1 4 oz diced undrained chilies
2 TBSP lemon juice
2 15 oz cans Great Northern Beans
2 cans 9 oz White Shoepeg corn
Monterey Jack
Corn Chips
green onions for garnish
Directions
INSTRUCTIONS
Cook and stir onion, garlic, cumin, oregano in olive oil in large saucepan until tender. Cut chicken in 1/2 inch pieces and add to remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for 30 minutes. Serve with shredded Monterey Jack cheese, tortilla chips and green onions.
