This was one of the first recipes I learned from my country grandmother. I have trimmed it down by using low-fat ingredients. Ingredients

    8 oz by weight low fat shredded cheese
    2 Tablespoons light mayonnaise - Hellman or Dukes gives the best flavor in my opinion
    1 ounce by weight roasted red pepper minced as small as you want.

Directions

Chop red peppers to suit your taste. Combine with shredded cheese and mix in mayonnaise, stirring to coat all ingredients. Serve as an appetizer on crackers or for a sandwich with a mini-pita with some lettuce. I use about a third of the mix on rice cakes for lunch with a salad.
