Introduction

Ingredients

    Butter 4.6 oz, softened
    Brown Sugar 6 oz
    Salt 1/2 tsp
    Cinnamon 2/3 tsp
    Nutmeg 1/4 tsp
    Eggs 2.6 oz
    Pastry flour 6.6 oz
    Whole wheat flour 1.3 oz
    Baking powder .16 oz (1/2 tsp)
    Baking soda 1/2 tsp
    Buttermilk 4 oz
    Applesauce 6 oz

Directions

Combine the butter, sugar, salt, and spices in the bowl of a mixer fitted with the paddle attachment. Cream the ingredients together until light. Add the eggs in two or three stages, creaming well after each addition. Sift together the flours, baking powder, and baking powder. Stir the liquid ingredients together until well-combined. Add the sifted dry ingredients alternately with the liquids as follows:

* Add 1/4 of the dry ingredients, mix just until blended.
* Add 1/3 of the liquid, mix just until blended in.


Repeat until all ingredients are used. Scrape down the sides of the bowl occasionally for even mixing. DO NOT OVERMIX.

Spray a muffin tin with nonstick spray, or line with muffin papers. Using a #20 scoop, deposit 2 oz batter into standard size muffin tins. Muffin tins will be about 2/3 full. Top with streusel if desired.

Bake at 400 F for 18 - 28 minutes, or until muffins have developed a "crown" and a golden color.

Cool 5 minutes on rack, then remove muffins from pan. Finish cooling on wire rack.
