Ingredients

4 large eggs
4 large egg, whites only
1/2 C milk, nonfat
1 T extra virgin olive oil
1 C onion, chopped
8 oz ham, lean, julienned
2 C spinach, frozen, thawed and well-drained
1 C Kraft Mexican Style 4 Cheese Blend 2%, shredded, divided
Black Pepper and seasonings to taste
Directions
Preheat oven to 375.
Add olive oil to heated skillet. Saute onions and ham til onions are tender. Add well-drained spinach, sauted til spinach is warmed. Pour into square baking dish. Setting 1/4 cup aside, sprinkle 3/4 cup cheese evenly over mixture.
Combine eggs, milk and seasonings in bowl, beat til well mixed. Pour egg mixture evenly into baking dish.
Bake 30 minutes, then remove from oven. Let sit 5 minutes before cutting into 8 equal pieces. Serve garnished with remaining shredded cheese.
