Ingredients

    2 Boneless Skinless Chicken Breasts
    2 Medium Potatoes, sliced
    1/2 Onion, cut into slices
    1 cup shredded light cheese
    1/2 cup shredded parmesan
    salt, pepper and garlic to taste

Directions

In a square baking dish, layer ingredients in the following order:

Chicken
Potato Slices
Shredded Cheese
Onion Slices
Parmesan Cheese

Place dish in 400 degree oven and bake about 40 minutes

    Very Good
    My husband and I really enjoyed this dish. It was very filling. I baked it at 350 until the chicken was cooked through and it wasn't dry. - 8/10/09

    This was pretty good, but it was a little dry. I'm going to keep playing with the recipe to see if I can find a combination I like better. - 2/28/09

    I agree, it was dry when I made it too. I felt like cooking and went with what I had on hand :-) Let me know if you come up with anything better. I'm not sure what to add to make it dry. I'd hate to add more cheese to it!
