Number of Servings: 1

2 pieces multigrain bread (I used 12 grain)

    1/4 cup nonfat (skim) milk
    2 egg whites
    1/2 tsp splenda
    1 tsp vanilla extract
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/4 tsp ground ginger
    2/3 tbsp ground flax seed

Mix milk, egg whites, vanilla, flax, and spices together in a large bowl. Be sure to break up the whites if you don't enjoy your toast eggy.

Let bread soak 20 seconds on each side. Careful, as if you let it soak too long, it will fall apart.

Place in lightly greased frying pan and cook on low-medium heat, flipping until browned on both sides.

Enjoy with condiment of choice, such as sugar-free syrup, powdered sugar, or fresh fruit.

I've only made French toast a few times, but this was the best by far! I omitted the Splenda and they were still plenty sweet. My husband was happy he couldn't taste the flax and I'm happy they were a little healthier for it! :) - 7/17/11

I just tried this recipe and loved it! I modified it using 100% whole wheat bread and it came out fine. Our family is just beginning to use flax, so this is timely for us. Thanks. - 2/12/11
