    2 cumbers peeled, seeded, halved and sliced
    grape tomatoes halved
    red or yellow bell pepper seeded, sliced
    sweet onion or red onion sliced
    kalamata olives halved or sliced
    garlic clove to taste (chopped fine)
    red wine vinegar or favorite vinegar
    extra virgin olive oil
    (can add feta cheese but it ups the calories significantly)

    My issue with this is that it is lacking measurements so I was just guessing how much vinegar to use and then it didn't have much flavor. - 6/26/09
