Introduction

Ingredients

1 Tbsp. olive oil
4 chicken tenders (the small section on the breast)
1 c. chopped red peppers (orange or yellow are fine)
1/2 c. chopped red onion
2 cloves garlic
1/4 c. creamy peanut butter
1 tsp ginger powder
1 tsp curry powder
1 tsp cumin powder
1/2 c. canned diced tomatoes
1 5.5 oz can V-8 juice
1 Tbsp. honey
1 c. cooked pasta
Directions
Puree garlic, peanut butter, spices and tomatoes in a food processor. Set aside.
Sear chicken tenders in 1/2 Tbsp. olive oil. Set aside to rest.
Saute peppers and onion in remaining olive oil until tender and just beginning to brown. Add puree and cook an additional 2 - 3 minutes. Add V-8 juice. Stir to blend and cook another 2 minutes.
Slice chicken tenders into 1/2" pieces. Add to sauce. Drizzle in the honey and stir to blend.
Serve over pasta.
