Ingredients

    2 pks sausage
    2-20 oz bags hash browns, thawed
    9 eggs
    1-1/2 tsp ground mustard
    1 tsp salt
    1/2 tsp pepper
    2 cups red fat shredded cheddar cheese
    1/2 cup onion, chopped
    1/2 cup green peppers, chopped
    1/2 cup red peppers, chopped

    cook sausage according to package directions, drain, pat grease off and cut into 1/4 inch coins

    combine eggs, salt, pepper & mustard, then add remaining ingredients

    pour into greased 9x13x2 pan - cover and refrigerate overnight.

    take out 1/2 hour prior to cooking, preheat oven to 350 and bake 60-75 min or until top is browned and eggs are cooked through. let sit for 10 min before cutting/serving.
