Introduction

This is a great vegetable curry - perfect for dreary days. Best served over rice or lentils. Ingredients

    1 tsp olive oil
    1 small onion, chopped
    2 cloves garlic
    1/2 head cauliflower, chopped into florets
    1 bunch broccoli, chopped into florets, discard stems
    1 brick tofu
    5 tbsp curry powder (add less or more to taste)
    2 can lite coconut milk

Directions

In a small stock pot or large sauce pan, saute onion and garlic in olive oil until onion is semi-translucent.
Add brocolli and cauliflower florets.
Add tofu.
Add coconut milk and curry. Stir well.
Let simmer for 15-20 minutes to allow veggies and tofu to absorb curry flavor.

Serve over rice or lentils.
