Ingredients

    1 lb Fusilli or Rotini Pasta (whole grain)
    1/4 cup EVOO
    1 garlic clove, minced (or more)
    1 9-10oz bag spinach, roughly chopped
    8 oz cherry tomatoes, halved
    1 cup (3.5 - 4oz) grated Asiago cheese
    1/2 cup grated parmesan cheese
    1 tsp salt (or to taste)
    3/4 tsp pepper (or to taste)

Directions

cook garlic in EVOO, add spinach till wilted, add cooked warm pasta, cheeses & tomatoes. Add salt and pepper to taste.
