Introduction

At our house "Mexican Night" happens once a week. Whether it's tacos, a casserole, or just a skillet dinner, there's always brown rice on the side. This recipes just fancies it up a bit, you know, "mexican style". At our house "Mexican Night" happens once a week. Number of Servings: 6

Ingredients

    2 cups Instant Brown Rice, dry
    1 1/2 c water
    1 can petite diced tomato (14.5oz) Drained
    1 can Pinto Beans (14.5oz) Drained
    3 garlic cloves, crushed
    1 tsp sugar
    salt & pepper to taste
    red pepper flakes to taste

Directions

1. Bring water to a boil.
2. Stir in rice, return to a boil. Boil 1 minute.
3. Add garlic, beans, and tomatoes, cover and simmer 5-7 minutes.
4. Stir in sugar, add red pepper flakes, salt and pepper to taste.
5. Cover and simmer (low heat!) 5 more minutes.
6. Remove from heat, let rest 5 minutes, stir and serve.
