Introduction
I got this recipe from Linda's low carb website.This recipe is doubled and the salt is ommited and paprika is used instead of old bay seasoning.

Ingredients

2 14-ounce cans of salmon, drained well
5 eggs
1/2 cup celery, chopped fine, 1 ounce
4 tablespoons onion, chopped fine, 1/2 ounce
1/2 cup green pepper, minced, 1 ounce
4 ounces cheddar cheese, shredded
Pepper, to taste
Pinch Old Bay seasoning or paprika
Directions
Mix all of the ingredients and spoon into 12-17 well-greased muffin cups (depending on how big you want your muffins to be). Bake at 350ยบ for 30 minutes until puffed, set and lightly browned around the edges.
