Introduction

I got this recipe from Linda's low carb website.

This recipe is doubled and the salt is ommited and paprika is used instead of old bay seasoning.

Low carb and very tasty. The whole family loved these little creations. Top them with some dill tarter sauce and you are good to go.

Ingredients

    2 14-ounce cans of salmon, drained well
    5 eggs
    1/2 cup celery, chopped fine, 1 ounce
    4 tablespoons onion, chopped fine, 1/2 ounce
    1/2 cup green pepper, minced, 1 ounce
    4 ounces cheddar cheese, shredded
    Pepper, to taste
    Pinch Old Bay seasoning or paprika

Directions

Mix all of the ingredients and spoon into 12-17 well-greased muffin cups (depending on how big you want your muffins to be). Bake at 350ยบ for 30 minutes until puffed, set and lightly browned around the edges.

Makes 17 muffins. 1 serv. = 1 muffin.
