Ingredients

    1/2 C. Avocado
    1 oz Lime Juice
    1/2 C. Squash, small dice
    1 ea. Hot Chili Pepper, minced
    1/2 C. Black Beans
    2 oz. Feta Cheese or queso fresco, crumbled
    1/4 C. Brown Rice
    1/4 C. Tomatoes, small dice
    1/4 C. Onion, small dice
    1 ea. Red Bell Pepper
    3 tbs. Cilantro, rough chopped
    3 tsp. Garlic, minced
    4 oz. Shrimp, chopped
    Salt and pepper to taste

Directions

Makes 1 Stuffed Pepper

-Soak beans overnight
-Boil rice until tender, set aside
-Saute onions until translucent, add chili peppers, garlic and squash. Cook until tender
-Add shrimp, cook through.
-Stir in black beans and rice
-Season with salt and pepper to taste
-Stir in 1 oz. cheese and 1tbs cilantro
-Squeeze in juice of 1/2 lime, stir
-Clean and remove the seed of red pepper, leaving it whole
-Stuff pepper with mixture
-Broil in oven until pepper is tender and filling is hot
-Garnish with avocado slices, tomato slices, cilantro, remaining cheese and lime wedge
-Serve warm
