Introduction

Quick & easy pasta, great with leftover chicken breasts. Quick & easy pasta, great with leftover chicken breasts.
Number of Servings: 4

Ingredients

    8 oz pasta
    8 oz crumbled Feta
    16 oz grape tomatoes
    3 cups spinach
    1/4 tsp salt
    1/4 tsp pepper
    (salt & papper to taste not exact)

Directions

Cook pasta according to package directions. Place the cheese in a larde bowl; top with spinach. Before draining the pasta, take 1/4 cup cooking water from the pot and pour over the spinach mix. (Will wilt slightly) Place tomatoes in colander. Drain the pasta over the tomatoes for a quick blanch. Toss with the spinach and cheese, sprinkle with salt & pepper. Makes 4 servings, enjoy!

    I think the calorie count is low- when you click to see the full calorie breakdown, the pasta alone is 200 calories. I would be curious to know what pasta was used if you really got 2 oz of pasta and all that other stuff in a dish for 174 calories... - 2/1/11

    I made this recipe just for me so I eye-balled the amount. I don't think I used enough spinach and unfortunately didn't have any tomatoes. What I did though was sautee the spinach with some chopped onions and minced garlic. Very fast and easy and it was pretty good. - 10/23/10

    Incredible!
    I was a bit skeptical while making it because it really looked a bit too simple. I was soo wrong! It was super easy AND super delicious. I love the combination of the feta with everything and the blanched tomatoes are super delish. Love this recipe! - 1/28/10
