Ingredients

* 4 large potatoes
* 75 ml Milk
* 1 tbs Margerine/butter (optional)
* 2 inch block of Chedder cheese
* 2 medium Onions
* 1 tomato
* Olive oil/butter (for frying onions in)
* salt, pepper and oregano
Directions
1. add potatoes to boiling water in a pan until well done, for approx 20-25 mins
2. Drain and empty into a large suitable bowl. Mash.
3. One mashed, add milk and butter/margerine. The more you add the fluffier it will be. To make it even lighter you could use a hand blender and whizz for 5 mins.
4. Grate the cheese and fold into mixture bits at a time.
5. In a frying pan heat a little bit of olive oil/butter and fry the onions until golden brown. (approx 7 mins)
6. Add to the mash mixture straight from the pan.
7. Mix in salt, lots of pepper and oregano (high in iron!) then spoon into an ovenproof dish. Flattern with a fork/spoon.
8. Shread sme more cheese in preperation for the finale. Sprinkle a small amount cheese on top of the flattened mash.
9. Cut 4 slices of the tomato and place evenly on top of the cheese. Spinkle the rest of the cheese on top making sure that you can still see bits of the tomato.
10. Place in a pre-heated over for 10-15 mins (depending on how you like it) at 150oC.
