    Chicken, no skin, 2 breasts, bone and skin removed, cut into thin strips
    Zucchini, 1.5 cup, thinly julienned
    Carrots, raw, 1 cup, sliced
    Onions, raw, 1 medium, thinly julienned
    Potato, raw, 1 small, thinly julienned
    Celery, raw, 2 stalk, medium, julienned
    Olive Oil, 2 tbsp
    Garlic, 2 tsp, fine chopped
    Cashew Nuts, dry roasted, 1 oz, pieces
    Water, 0.5 cup
    1 tsp cumin
    salt and pepper to taste


Heat oil. Add chicken and season with cumin, salt and pepper. Cook for a couple of minutes until almost done.
Add veggies and cook for about two to three minutes until soft. Add garlic and cook until fragrant.
Add water and correct seasoning. Cover and let simmer, in low heat for five minutes, until chicken is completely cooked and veggies are done.
Uncover, add cashews and stir a couple times to mix.
Serve warm. About 8 servings.
