Ingredients

20 oz can pinapple chunks, drained, juice reserved
Juice of 1 lime, plus grated peel
2 t. olive oil
1/2 c. soy sauce
1 t. ground ginger
1 pound shrimp, peeled and deveined
1 T. Tabasco
1 bell pepper, seeded and cut in 1 inch chunks
1 red onion, cut in 1 inch chunks
1 1/4 c. cous cous
Directions
Soak skewers in water for 30 minutes.
In a shallow dish, mix 3/4 c. pinapple juice, 1 T. lime juice, soy sauce, 1/2 t. olive oil, hot sauce and ginger. Set 2 T of the mixture aside for later
Preheat broiler or grill. Skewer the shrimp, pepper, onion and pineappel. Place skewers in marinade and leave in refrigerator for 15 minutes.
Bring 1 3/4 c. water, remaining olive oil and 1/4 c. of pineapple juice to a boil. Add couscous, stir and remove from heat.
Grill or broil kebabs and serve over couscous.
