Introduction

This is an experiment into making tomato soup. I had been growing tomatos and had too many so decided to try some soup. Still needs tweaking!

It's quite high in sodium - probably from the chicken broth. You can use a low sodium broth instead.

Ingredients

    2 cups fresh tomatoes, diced with juices
    ¼ cup Vidalia onions, chopped
    ½ jalapeno pepper, seeded, finely chopped
    1/8 cup cabbage, finely chopped
    1 clove garlic, finely chopped
    ¼ cup green pepper, chopped
    1 stalk celery, chopped
    1 Tablespoon sugar
    1/8 teaspoon oregano
    ¼ teaspoon basil
    Dash of Wocester (optional)
    Salt & Pepper to taste

    Note: This is a rather bland tasting soup. Not sure what can help. I would forego the green peppers next time.

Directions

I didn't want a chunky soup so I put all of the ingredients into a VitaMix (a blender will work, too). I first put in the chicken stock and added the cabbage, celery and green peppers. Once that was mixed I added everything else.

You don't have to blend everything together if you prefer a chunkier soup.
