Ingredients

    4 boneless,skinless chicken breasts,cubed
    1 large onion , chopped
    4 apples, chopped,toss with lemon juice
    2 red,orange or yellow peppers, chopped
    DRESSING
    1/4 cup low fat ,or fat free plain yogurt
    2 tablespoons curry paste
    2 tablespoons mango chutne

Directions

Poach chicken with onion,salt and pepper
add the chicken and onions to apples and peppers, mix dressing ingrediants and toss with above. Makes about 6, 1 cup servings, Serve over lettuce or in a pita.
