Number of Servings: 6

Ingredients

    12 oz dried lentils
    2 cups water
    2 bay leafs
    2 tsp salt
    1/4 tsp pepper
    1/4 tsp marjoram
    1/4 tsp sage
    1/4 tsp thyme
    1 large onion
    5 cloves garlic, minced
    1 can tomatoes
    1.5 cups sliced carrots
    1 cup chopped celery
    1 red (or green) pepper, chopped
    1 tbsp parsley, chopped
    1.5 cups shredded cheddar cheese

Directions

Place lentils in a shallow 13x9 pan with water, bay leafs, salt, pepper, marjoram, sage, thyme, onions, garlic and tomatoes & their liquid.

Bake covered at 375* for 30 minutes.
Remove from oven and stir in carrots and celery. Cover and bake 40 more minutes (until veggies are tender).
Remove from oven and stir in peppers and parsley, sprinkle cheese on top. Bake uncovered for 5 more minutes.

Makes 6 1.5 cup servings
