Introduction
I adapted a recipe from Taste of Home by substituting flax seeds/water for eggs, splenda for sugar, and half the oil with natural applesauce. I end up with 99 calorie muffns that are so darn yummy! Ingredients

1 3/4 cup white whole wheat pastry flour
1 1/2 cup splenda for baking
1 1/2 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tbsp. flax seed, ground, blended until creamy with 6 tbsp. water
1 cup mashed sweet potatoes
1/4 cup canola oil
1/4 cup unsweetened applesauce
1/3 cup water
Directions
In a large bowl, blend together all dry ingredients. In another bowl, mix wet ingredients. Add to dry ingredients until just blended - do not overmix.
Drop batter into muffin tins sprayed with non-stick cooking spray.
Bake at 350 for 15 minutes.
