Introduction

Ingredients

    1 T. Olive Oil
    1 Fennel Bulb, chopped
    1 large onion, chopped
    15 cloves of garlic, minced
    1 small Zucchini, halved and sliced
    1 28oz can diced tomatoes, Italian Style
    1/2 cup red wine
    2 cups chicken broth
    1 T. oregano

Directions

Heat olive oil in large stock pot. Add onion, fennel, garlic, and zucchini and saute until soft. About 10 minutes. Add oregano. Add tomatoes, wine, and chicken stock. Simmer for 20 minutes until all veg are soft. Turn heat off and lay all of the fish on top of the soup, cover the pot and let the fish go until you are ready to eat, at least 10 minutes. If the fish isn't cooked through, "flaking", turn heat on again for a few minutes. Do not overcook fish.
