Ingredients

1 qt. free range chicken broth
1 can coconut milk
2 T shredded ginger root
3 T dried basil
Zest & juice of 1 lime
3 chicken breasts, chopped into bite-size pieces
4 carrots, sliced
1 red bell pepper, chopped
1 c sliced mushrooms
2 stalks celery, sliced
2 small zucchini, chopped
2 c frozen corn
Salt to taste
Directions
Combine coconut milk, broth, ginger, lime zest & juice, & basil. Bring to boil & reduce heat to medium-low. Simmer while you chop the veggies & chicken. Add meat & veggies to broth & simmer about 10-15 minutes until chicken is cooked through & veggies are tender.
