Ingredients

    * 8 fat sausages (95% meat)

    * 200g ground almonds

    * 50g butter

    * 1 small egg white

Directions

Mix together 200 grams of finely ground almonds, 50g of softened butter and a small egg white. It makes quite a sticky mixture and can be difficult to roll out.


Roll it out between two sheets of baking parchment. You might need to dust the lower sheet lightly with flour first. Make the pastry into a long thin shape when you roll it. Take the top parchment off, lay a row of sausages on the pastry and roll both the pastry and the lower sheet of parchment over the sausages. Peel off the parchment. Press the pastry down along the edge of the sausages, and cut the excess pastry away. Gather up the remaining pastry and reroll it to do the rest of the sausages. Brush the top of the sausages with an egg-milk mix to glaze. Put the sausages on a baking tray and bake at 170°C for 30-40 minutes until the sausages and pastry are cooked.


Serving nutrition is based on short, fat sausages that are cut in half, but you could cut them down further to make bite-sized pieces for a party. Great with low-carb tomato sauce!
