Ingredients

    * 1 1/4 cups flour
    * 1 cup oat bran
    * 5 packets stevia
    * 1 tablespoon baking powder
    * 1/2 teaspoon baking soda
    * 1/2 teaspoon salt
    * 3/4 cup skim milk
    * 1/4 cup unsweetened applesauce
    * 1 teaspoon vanilla
    * 2 very ripe bananas, chopped

Directions

# 1 Preheat oven to 400 degrees F.
# 2 Combine dry ingredients in large bowl.
# 3 Whisk milk, applesauce and vanilla in medium bowl.
# 4 Add milk mixture to dry ingredients, stirring just until combined.
#5Mix in bananas.
#6Divide batter among 12 muffin cups (spray muffin pan with nonstick spray first).
#7Bake until toothpick inserted in centre of muffins comes out clean, about 20 minutes.
#8Transfer to a rack to cool.
#9Serve warm or at room temperature.
