    -3 boneless skinless chicken breast
    -1 jar tastefully simple corn and black bean salsa
    -2 cups shredded cheese(fiesta blend is in the calculations)
    -1 can olives sliced or chopped
    -1 sm can red enchilada sauce
    -10 whole wheat flour tortillas


Place chicken and jar of salsa into crock pot and cook on low all day or high couple of hours. Shred chicken with fork. Pre heat oven to 350. place a small amount of enchilada sauce in 9 by 13 pan. in each tortilla put refried beans, chicken, cheese, and olives. Roll tortilla and place in pan and repeat for all the tortillas. Pour the rest of enchilada sauce over the top and place left over cheese and olives on top of that. Bake about 20 min. until cheese is good and melted and everything is heated through. Makes 10 servings.
(I love to make extra chicken and use it the next day in quesadillas or tacos or whatever) ; )
