Ingredients

    2 lbs. very lean beef - ie. ground sirloin
    1/2 can Hunts Tomato Sauce
    1 can Del Monte Stewed Tomatoes (Italian)
    2 cups Brown Rice (uncooked)
    1 can Tops whole kernel corn
    1 can Tops chili beans

Directions

Brown beef in olive oil, then add peppers. When peppers are beginning to soften, add rice (uncooked) and a small amount of water, stewed tomatoes and tomato sauce. Cover - Stir occasionally over medium heat. While rice is cooking, starting heating corn and chili beans in sep. pans. When rice is cooked, you're done. I put my rice on the plate, then add a good scoop of corn (drained) and chili beans (in their sauce) on top. VERY filling - but still tempting to overeat.
